Spinach and Strawberry Salad recipe
This unusual salad is a brilliant dish to serve as a starter. If you want to, add some ricotta cheese to add texture and flavour. Season with cracked black pepper if you like, as this goes brilliantly well with strawberries.
Ingredients:
- 500g baby spinach leaves, washes
- 10 large strawberries
- 100g caster sugar
- 250ml vegetable oil
- 65ml white wine vinegar
- 1 tbsp. black poppy seeds
- Salt and pepper
Directions:
Blitz the caster sugar, oil, vinegar, salt and pepper in a blender. Stir in the poppy seeds.
Wash the spinach and thinly slice the strawberries. Toss the spinach and strawberries together with the dressing just before serving.
